White Knight doesn't run counter to her development. It enhances it as she isn't looking down on everybody, anymore, and is now seeing people for their underlying strengths, rather than just the superficial and figuring out which men are not just after her name, money and status.
Remember that a reason that Pyrrha loved Jaune was because she saw his potential.

It runs counter to her quest for Independence and choosing her own life decisions, as Jaune was the one who went after her and she said "NO" quite clearly, respecting Jaune isn't the same as dating or marrying him.
Her intial attraction was just that he didn't know her name, which actually reflects poorly on his memory and intelligence, considering that his family went through enough boxes of the cereal for the saved box tops to get a free hoody which fit him until recently.
73.Anon.52, Weiss's "quest" isn't "independence" from everybody, it's "defiance" against the people in her life who tried to control her for their own selfish reasons. Weiss has learned to rely on and trust her teammates and her friends. In fact, just learning to *have* friends has been a huge advancement for Weiss.

well, not necessarily… we know she was on SOME of them, but not how many, how long ago, nor how long his family uses the boxes... I can remember at least 20-50 athletes being on the Irl cereal brand... I can probably name like 5 and that'd be because of what made them famous rather than the cereal.
Well she can't have been a celebrity that long. She would have had four years of combat school before this, but beyond that, and I'm starting to question just how healthy her relationship with her parents (and maybe an agent) really was. At that point you're starting to get into child star territory, which has an unfortunate tendency of said stars meeting premature retirement. (implosion, burned out, exploded, flared out... take your pick for the star analogy)
I doubt that this particular brand had that big of a stable, unless we're looking at a span of decades. Usually those deals tend to be with cereal that has a shot of being taken seriously as "athlete grade ignition fuel" (trademark pending).
Weiss also said Pyrrha was on every box, and while that was probably hyperbole, Jaune did seem to show recognition at that point, and I'd imagine that she's a pretty good face to move merchandise given her status as a prodigy.

1. Precisely, that means we can likely narrow it down to the last 6 years or so that she was popular enough to be on them.
2. to my recollection Wheaties had a box change around every 1-3 months, If Jaune's family buys in Bulk at outlet stores such as the IRL Grocery Outlet store, it could easily be that Pyrrha's box promotion never made it to such stores, or that as he is 1 of 8 children he may not have gone such grocery store runs, and mostly saw the boxes in the recycle bin or as he was cutting the proof of purchase off.
3. If we factor in that Weiss always bought name brand, 1st run, she would have had the newest Cereal, which most likely included Pyrrha's run in the last 2-4 years.
